JOSETTE'S BISTRO

Josette LeBlond got her start in the food business at the early age of 7. Growing up in a family that owned a charcuterie, a fancy French word for deli, Josette made a habit of helping out in the shop after school. This love of work and food carried over into her adult life. She eventually took over the family business, perfecting her skill in making pate and expanding to making breads. Eventually, Josette realized that she was spending all her time working. So she decided to sell her current business holdings and open a more modest storefront that would make money on a seasonal basis, giving her months of downtime. During the transition between businesses, she took a trip to the United States and decided to relocate to Los Angeles. "I chose to make a move to L.A. because I saw so much life there. It was the place I needed to be." After relocating, she got a job working in the kitchen of the Queen Mary where she took up making pate again. While working at the Queen Mary, Josette was discovered and given business backing to start her own business. This was the start of her Normandie Pate. Today, Josette's Bistro sells over a ton of product on a daily basis.

Josette quickly expanded her business, opening storefronts in Los Angeles selling not only her famous pate but also pastries and bread. In 2000, she moved to Las Vegas. "I planned on relaxing and taking it easy in Las Vegas. I did not move here to start a business." After some requests, she started shipping her products to some of the Strip hotels. Realizing that Las Vegas was an untapped market, Josette decided to open a factory kitchen in town to supply the number of requests she was receiving for pate and bread. After two years of building her business, she wanted to have a place where she could meet customers and share the things she loves. She purchased a coffee house and remodeled it to suit her desires.

Josette considers her bistro her home. "When people enter my restaurant, they are entering my home. I give them a taste of the things I love and show them something about myself through my food and company." At her bistro, you can expect classic French fare along with some of her favorite standards. "I am an American citizen, so I want my place to be American with a French flair." Josette's Bistro also has a good-sized wine selection, and the thing that LeBlond is most proud of is her entertainment. Every night of the week customers can expect a musician, a piano player or a singer to regale them throughout their meal. Josette's Bistro is not just a restaurant. It is a destination - a place where you can expect to be known and cared for as if you were one of the family.
